Nikolaihof is one of the oldest Estates in Austria. Wine has been produced here since the time of the Celts, and after the Monks took over in 470AD, written documents show vineyard sites here as the oldest named vineyards in Europe. Nikolaihof is one of the first wineries to be fully bio-D, and as chemicals have never been used in farming, it has essentially always been organic. They've got beehives, herbs, fruits and flowers and use native yeast in the winery. Lees contact is mad typical and adds complexity and fleshiness to the wines.
The Zwickl is and unfiltered "Hefeabzug," and is bottled as such. Shake it up for a full glass of unfiltered goodness or pour the first third of the bottle clear, and shake up the rest. White flower and chamomile, bright acidity, yeasty goodness.
