Hervé Souhaut works 5 hectares of old vines in the Rhône Valley, right across from the hills of Hermitage in St Joseph. Hervé works with whole clusters and semi carbonic maceration, making his style of wine more approachable than many of the Rhône's heavy hitters.
60-80 yr old Gamay vines grown in schist soil. Long maceration on stems, aged on lees on used oak casks. Very little SO2. Strawberries, plums, smokey herbs and black fruit. Gamay but with smokey bacon fat. Completely fire.
