Filipa Pato and her man, William Wouters are the kind of dazzling, intelligent, local flava style of husband and wife team we need in an unknown region such as Bairrada. Filipa graduated with a degree in Chemical Engineering (no bigs) and has studied winemaking all over the world. William is a chef, restauranteur and baller Sommelier from Belgium. Together they geek out on food, wine and indigenous varieties farmed in full Bio-D and very low intervention.
Baga is an ancient varietal in Bairrada and a grape you for sure need to throw in your rotation. It comes from old recovered vines planted in clay and limestone soils for a wine with structure and aromatics. The Território Vivo is woke. Beautiful red fruit, elegance and structure.
