Upon realizing being a lawyer was not actually his jam, Nicolas Mariotti Bindi threw out the briefcase and got way into winemaking. Nicolas got his feet wet in the trenches of the Moulin-à-Vent sub region of Beaujolais before returning to his home in Corsica. He now farms 15 hectares of vine and his first release was in 2007.
Crisp, elegant, salty minerality and great acidity. Unfined, unfiltered, native yeast, little sulfur, all the rage with seafood.
